The crisis began in 2020 when, according to Growing Produce, California lettuce cultivators faced hotter-than-average temperatures and crop diseases that led to a shortage of iceberg and romaine lettuce. The conditions bled into 2021, with Mintec indicating that lettuce increased in price 67% from the previous year due to low supplies. “Almost all plants grow faster hydroponically than they do in soil-based farming methods,” the publication reported. “This is because the plant’s light, nutrition and water are all under your complete control.” Iceberg lettuce can be harvested in just six to eight weeks, and romaine and butterhead as quickly as three to four weeks. “In general, most hydroponic leafy greens offer 11-13 harvests per year.”
